Serves 2

Ready in 25 mins

Sweet, salty, sticky and all done in the air fryer. Sliced paneer, Tenderstem broccoli, shiitake and spring onions glazed in a glossy soy, honey, garlic and ginger marinade, finished with chilli oil, sesame and lime. Tip: leave it all to marinate for 30 minutes if you have time, then serve over sticky rice.

Ingredients

  • 400g All The Aunties Original Paneer, sliced
  • 300g Tenderstem broccoli
  • 150g shiitake mushrooms
  • 8 spring onions
  • Marinade
  • 4½ tbsp soy sauce
  • 2½ tbsp honey
  • 1½ tbsp sesame oil
  • 1½ tbsp Shaoxing wine
  • 4 garlic cloves, grated
  • 5cm ginger, grated
  • 1 tsp white pepper
  • ½ tsp lime juice
  • To finish:
    • Chilli oil
    • Sesame seeds
    • Lime
    • Coriander (optional)

Method

  1. Simmer the marinade for 3–4 minutes until thick and glossy. Reserve 1 tbsp.
  2. Toss the paneer and veg in the remaining marinade and leave for 30 minutes (or cook straight away).
  3. Air fry at 200°C for 10–12 minutes, brushing with the reserved marinade for the last couple of minutes.
  4. Finish with chilli oil, sesame seeds and lime. Serve over sticky rice.
