Sima Aunty’s Three Cheese Paratha

Serves 4

Ready in 45 mins

Golden, flaky and OOZING with cheese. Sima Aunty's parathas are stuffed with grated cheddar, mozzarella and paneer, then finished with a melting garlic, chilli and parsley ghee. Tip: you don't have to use all three cheeses, just measure and choose with your heart.

Ingredients

  • For the cheese mix:
    • Cheddar, Mozzarella, Paneer: all grated in equal quantities. You don’t have to use all three, just measure and choice with your heart.
  • For the chilli garlic spread:
    • 1 heaping tbsp of ghee (or butter)
    • 2 cloves garlic
    • 1 red chilli
    • Small handful parsley
    • 1 tsp salt
  • For the paratha:
    • 2 cups atta (or plain flour)
    • 1 tbsp corn starch
    • 2 tsp baking powder
    • 1 tbsp neutral oil
    • 1 tsp salt
    • ½ cup cold water

Method

  1. First, grate your cheese so the mixture is ready and set aside in a bowl.
  2. Prepare the ghee but adding the garlic, chilli, salt and parsley to a pestle and mortar and smashing down to a paste. Then mix in your ghee/butter.
  3. Now prepare the dough for the paratha: add all your dry ingredients to the bowl and give it a good mix, then add in your oil and mix through, pinching to create some loose breadcrumbs (don’t stress too much about this part), then gradually drizzle in the water till the dough comes together in a clean ball, pulling away from the sides. It should be soft but not wet.
  4. To make the parathas: take some flour and dust your flat surface. Take a small ball of dough (slightly larger than a golf ball, say) and roll it out till it’s round and fairly thin. Now take a tbsp of your cheese mix and place it into the centre, folding in the sides of the dough till they meet in the middle. Like a wrapped parcel.
  5. Now once it’s enclosed, ensuring the edges meet, roll out again (adding flour as you need to stop the dough from sticking), until round. The shape doesn’t really matter but just want the depth to be around 1-2cm. So the bread will cook and the cheese will melt.
  6. Now place in a non stick pan on a medium heat.
  7. Cook for 2-3 minutes of one side before adding a little drizzle of oil to the pan and then flipping over to cook for a further 2 minutes. It should be golden and oozy.
  8. Melt over the garlic butter when hot and enjoy.
