Paneer Satay Skewers

Serves 4

Ready in 50 mins

Nutty, sticky and golden at the edges, these skewers are a proper crowd pleaser. Paneer soaks in a peanut, soy and honey marinade, then hits the grill and gets a glossy brush of creamy satay sauce. Tip: marinate for up to 2 hours if you can, and serve with extra sauce for dunking.

Ingredients

  • Paneer marinade:
    • 400g All The Aunties Original Paneer, cut into small cubes
    • 2 tbsp smooth peanut butter
    • 2 tbsp soy sauce
    • 1½ tbsp honey
    • 2 cloves garlic, grated
    • 1 tsp fresh ginger, grated
    • 1 tsp curry powder
    • ½ tsp Chinese five spice
    • 1–2 tbsp water or coconut milk, to loosen
  • Satay sauce:
    • 2 tbsp smooth peanut butter
    • 1½ tbsp soy sauce
    • 1½ tbsp honey
    • ½ tsp Chinese five spice
    • Juice of ½ lime
    • 100 ml coconut milk
    • ½ small clove garlic, finely grated

Method

  1. Mix everything into a smooth marinade. Add the paneer and gently coat. Marinate for 30 minutes (up to 2 hours if you have time).
  2. For the satay sauce, whisk until smooth and gently warm until pourable.
  3. Thread the marinated small paneer cubes onto skewers.
  4. Heat a grill pan or BBQ to medium-high and lightly oil.
  5. Cook for 8–10 minutes, turning regularly, until golden with lightly crisp edges.
  6. Brush with satay sauce in the last few minutes to caramelise.
  7. To finish, top with chopped peanuts, fresh coriander, and sliced fresh red chillies. Serve hot with extra satay sauce on the side.
