Paneer Fried Rice

Serves 3-4

Ready in 15 mins

Better than a takeaway and on the table in 15 minutes. Crumbled Original Paneer tossed through garlicky, gingery fried rice with peas, carrots, soy and a drizzle of sesame oil. Tip: cold cooked rice is KEY, and a pouch of ready-cooked rice works perfectly if you're feeling lazy.

Ingredients

  • 200g All The Aunties Original Paneer, crumbled
  • Cold cooked rice 4 cups (I used a packet of vestee sticky)
  • Ghee/Veg oil 2 tbsp
  • Garlic 3 cloves, minced
  • Ginger, small knob
  • Spring onions 2, sliced
  • Frozen peas & carrots 1 cup
  • Soy sauce 2 tbsp
  • White pepper ¾ tsp
  • Salt 1½ tsp (adjust for salt)
  • Toasted sesame oil 1 tsp
  • Pinch of sugar
  • Eggs are optional for extra protein
  • Coriander and chilli oil to finish (nuts too if you want!)

Method

  1. Heat oil; fry garlic, ginger and spring onion whites.
  2. Add veg; cook until tender.
  3. Add rice, soy, salt, sugar and pepper; toss well.
  4. Push rice aside; scramble eggs if using.
  5. Mix through, drizzle sesame oil and finish with coriander, chilli oil.
