Paneer, Chorizo and White Bean Stew

Serves 2

Ready in 40 mins

A cosy, bubbling stew made ENTIRELY in the air fryer. Crispy chorizo, soft paneer and white beans in a smoky harissa tomato sauce, finished with a golden, crunchy parsley crumb. Swap: use veggie chorizo and a vegetarian hard cheese for the crumb to keep it vegetarian.

Ingredients

  • 200g All The Aunties Original Paneer (cubed)
  • 100g diced chorizo
  • 1 tin Mutti chopped tomatoes
  • 8 cherry tomatoes, halved
  • 1/2 tin white beans (drained)
  • 1 small red onion (chopped)
  • 3 cloves garlic (minced)
  • 1–2 tsp harissa
  • ½–1 tsp chilli flakes
  • Salt + black pepper
  • Olive oil
  • Parsley crumb:
    • Fresh parsley (chopped)
    • 2–3 tbsp breadcrumbs
    • 2 tbsp parmesan
    • Olive oil + pinch of salt
    • (Optional: lemon zest)

Method

  1. Air fry chorizo at 190°C for 6–8 mins until crispy. Remove but keep the oil.
  2. Add onion + garlic to the same dish. Cook at 180°C for 5–6 mins until soft.
  3. Stir in tomatoes, white beans, harissa, chilli flakes, salt + pepper. Cook at 180°C for 10 mins.
  4. Add paneer (tossed in a little oil + salt) and the chorizo. Cook at 190°C for 8–10 mins until bubbling + golden.
  5. Mix parsley, breadcrumbs, parmesan + olive oil. Scatter on top.
  6. Air fry at 200°C for 3–4 mins until crisp + golden. Finish with extra parmesan + black pepper
