Mediterranean Paneer Wraps

Serves 2

Ready in 20 mins

A little taste of the Med, straight from your air fryer. Golden paneer, courgette, olives and sun-dried tomatoes piled into a warm wrap with garlicky yogurt, fresh basil and a drizzle of balsamic glaze. No air fryer? Roast everything in the oven at 200°C for 15 to 20 minutes instead.

Ingredients

    • 200g paneer, cut into cubes
    • 1 small courgette, cubed

    • 6–8 kalamata olives, halved
    • 4–5 sun-dried tomatoes, sliced
    • 1 tsp dried oregano
    • 1 tbsp olive oil, or a little oil from the sun-dried tomato jar
    • Salt and black pepper, to taste
  • For the garlicky yogurt:
    • 4 tbsp Greek yogurt or thick natural yogurt
    • 1 small garlic clove, grated or crushed
    • Squeeze of lemon juice, optional
    • Pinch of salt
