Madhu’s Garlic & Chilli Chutney

Serves 4

Ready in 10 mins

Absolutely blow your sandals off MEGA. Madhu's fiery garlic and chilli chutney takes 5 minutes to blend and adds a serious kick to burgers, wraps and grilled paneer. Tip: make a big batch, it keeps for up to 3 months in a sealed jar or a whole year in the freezer.

Ingredients

  • 100g (3½oz) red chilli powder (8–10 tablespoons)
  • 6–8 garlic cloves, roughly chopped
  • 1 teaspoon salt
  • 4 tablespoons oil
  • 1 teaspoon ground cumin (optional)

Method

  1. Using a blender, food processor, or mortar and pestle, combine the red chilli powder, garlic, salt, oil and cumin, if using, until smooth.
  2. Add water, ½ teaspoon at a time, until the chutney reaches a thick and spoonable consistency. This should take around 5 minutes.
  3. Check the seasoning and adjust the salt if necessary.
  4. Store in a sealed container for up to 3 months, or in the freezer for up to 12 months.
