Hariyali Paneer Kebabs

Serves 4

Ready in 45 mins

Green, zingy and bursting with fresh herbs, these are made for the barbecue. Chunky Cumin, Chilli & Turmeric Paneer soaks overnight in a vibrant coriander, mint and green chilli marinade, then needs just 4 minutes on the grill. Tip: they taste best over an open flame, but the air fryer works a treat too.

Ingredients

  • 400g All The Aunties Cumin, Chilli & Turmeric Paneer, chunky cubes, scored
  • Any veggies you fancy (leeks, peppers, red onions, courgettes)
  • Marinade:
    • 100g coriander
    • 30g mint
    • 1–2 green chillies
    • 2 garlic cloves
    • 1 inch ginger
    • 1.5 tsp cumin powder
    • 1 tsp lemon juice (or ½ tsp amchur)
    • 2 tsp jaggery/honey/sugar
    • ½ tsp salt
    • 1 tbsp olive oil/ghee
    • 1–2 tbsp water

Method

  1. Blitz all marinade ingredients in a food processor. Keep slightly textured or blend smooth. Add water to get desired consistency.
  2. Score paneer cubes and marinate in the fridge overnight, or at least a few hours.
  3. Skewer with some space between the cubes.
  4. Grill for 1 minute each side on high (4 minutes total). Also works great in an air fryer.
