Cumin Paneer Pizza

Serves 2

Ready in 25 mins

Paneer on pizza!? YES AUNTY YES. Think gooey mozzarella, spicy paneer, colourful veggies and a tomato base with a little Indian twist. It's the pizza night upgrade you didn't know you needed. Trust us on this one.

Ingredients

  • For the pizza:
    • 1 large ready-made pizza base or 250 to 300g pizza dough (shop-bought or homemade)
    • 150g marinara sauce
    • 1 to 2 tsp tandoori paste
    • 1 pack (200g) All The Aunties Cumin, Chilli & Turmeric Paneer, cubed
    • 125g mozzarella, torn or grated
    • ½ red pepper, thinly sliced
    • ½ red onion, thinly sliced
    • 80g sweetcorn, drained
    • 1 tbsp olive oil
    • Small handful fresh coriander, chopped, to finish
  • For homemade pizza dough (optional):
    • 250g strong white bread flour
    • ½ tsp fast-action dried yeast
    • ½ tsp salt
    • 1 tbsp olive oil
    • 150ml lukewarm water

Method

  1. Prepare your dough: If using shop-bought pizza dough, roll it out on a lightly floured surface. Alternatively, make your own by mixing the flour, yeast and salt in a bowl. Add the olive oil and lukewarm water, mix into a dough and knead for 5 to 8 minutes until smooth. Cover and leave to rise for approximately 1 hour, or until doubled in size, before rolling out.
  2. Preheat the oven: Heat your oven to 240°C (220°C fan) and place a baking tray inside to heat up.
  3. Make the sauce: Mix the marinara sauce with 1 to 2 tsp tandoori paste until combined. This gives the classic tomato base a smoky, gently spiced Indian-inspired twist that pairs perfectly with the Cumin, Chilli & Turmeric Paneer.
  4. Assemble the pizza: Spread the sauce evenly over the pizza base, leaving a small border around the edges. Scatter over the mozzarella, followed by the sliced peppers, red onion and sweetcorn.
  5. Add the paneer: Arrange the cubes of All The Aunties Cumin, Chilli & Turmeric Paneer over the pizza and drizzle lightly with olive oil.
  6. Bake: Carefully transfer the pizza onto the preheated baking tray and bake for 12 to 15 minutes, or until the crust is golden, the mozzarella is bubbling and the paneer has lightly golden edges. Follow the packet instructions if using a pre-cooked pizza base, as it may need less time.
  7. Finish: Remove from the oven, scatter generously with fresh coriander, slice and serve immediately.
