Buffalo Paneer Bites

Serves 4

Ready in 30 mins

Ooey, gooey, crispy, saucy and everything you want them to be. Controversial opinion, but we reckon these might just be an upgrade on your classic buffalo chicken bites. Golden, crunchy paneer smothered in buttery buffalo sauce, drizzled with creamy ranch and served with pickles. YUMMMMM.

Ingredients

  • For the crispy paneer:
    • 2 packs (400g) All The Aunties Original Paneer, cubed or broken into bite-sized chunks
    • 4 tbsp cornflour
    • 1 tsp all-purpose seasoning
    • ½ tsp freshly ground black pepper
    • ¼ tsp salt
    • 2 eggs, beaten
    • 100g panko breadcrumbs
    • Vegetable or sunflower oil, for deep-frying
  • For the buffalo sauce:
    • 100ml buffalo hot sauce
    • 40g unsalted butter
    • 1 tbsp honey
  • To serve:
    • 4 tbsp yoghurt ranch dressing
    • Sliced pickles, to serve
    • Extra buffalo sauce (optional)

Method

  1. Prepare the paneer: Cut or tear the All The Aunties Original Paneer into bite-sized chunks. Rough, uneven edges are great for getting an extra-crispy coating.
  2. Season: In a large bowl, mix together the cornflour, all-purpose seasoning, black pepper and salt. Add the paneer and toss until every piece is evenly coated.
  3. Bread the paneer: Beat the eggs in a separate bowl and place the panko breadcrumbs in another. Dip each coated paneer piece into the egg wash, then roll in the panko breadcrumbs, pressing gently to ensure an even coating.
  4. Fry until golden: Heat the oil in a deep, heavy-based saucepan to 175°C. Carefully lower the paneer bites into the oil in batches and fry for 2 to 3 minutes, turning occasionally, until golden brown and crispy. Remove with a slotted spoon and drain on kitchen paper.
  5. Make the buffalo sauce: In a separate saucepan over a low heat, melt the butter. Add the buffalo sauce and honey, stirring until smooth, glossy and warmed through.
  6. Get saucy: Add the crispy paneer bites to the buffalo sauce and give everything a good toss until generously coated.
  7. Serve: Pile the sticky buffalo paneer bites onto a serving plate, drizzle over the yoghurt ranch dressing and serve with a slice of pickle or two. YUM!
