Paneer 65 ish

Serves 2-3

Ready in 30 mins

Our take on the much-loved Paneer 65, baked not deep-fried! Spiced, battered paneer crisps up in the oven, then gets tossed with sizzling garlic, green chillies and curry leaves. Swap: no Maggi Hot & Sweet? Ketchup or sweet chilli sauce works just as well.

Ingredients

  • All The Aunties Cumin Paneer 200g, cubed
  • Cornflour 2 tbsp
  • Ginger-garlic paste 1 tsp
  • Red chilli powder ¾ tsp
  • Turmeric ¼ tsp
  • Cumin ½ tsp
  • Garam Masala 1 tsp
  • Black pepper ½ tsp
  • Salt to taste
  • Water as needed
  • Curry leaves 1 sprig (10 leaves)
  • Green chillies 2
  • Garlic 1 tbsp, chopped
  • Soy Sauce 1 tbsp
  • Maggi hot and sweet 1 tsp (can use ketchup/sweet chilli here)
  • Ketchup 1tsp
  • Oil, for frying
  • Squeeze of lemon
  • Spring onion, coriander to finish

Method

  1. Make thick batter with cornflour, spices and water.
  2. Coat paneer and bake at 200 degrees until crisp for about 20 mins. Turn half way.
  3. Fry garlic, chillies and curry leaves in oil. Add in your sauces (if using you don’t have to)
  4. Toss paneer through and finish with lemon, spring onions and coriander.
