Paneer Spring Roll

Serves Makes 12-15

Ready in 45 mins

Golden, shatteringly crisp and stuffed with paneer, these are PERFECT party food. Crumbled paneer and shredded veg in a punchy soy, chilli oil and five spice filling, rolled up in filo and fried or air fried until crunchy. Tip: keep the filling dry so the rolls stay crisp, and use vegetarian oyster sauce to keep them veggie.

Ingredients

  • 200g All The Aunties Paneer, finely crumbled
  • 1 tsp sesame oil
  • 1 tsp ginger, finely minced
  • 2 cloves garlic, finely minced
  • 300g mixed veg, finely shredded (cabbage, carrot, spring onion) – I just used a stir fry veg bag
  • 1½ tbsp soy sauce
  • 1 tbsp oyster sauce
  • ½ tsp Chinese five spice
  • 1 tbsp chilli oil (or to taste)
  • 1 tsp honey
  • White or black pepper
  • Salt – taste for seasoning
  • To assemble:
    • 12–15 filo sheets or spring roll wrappers
    • Neutral oil, for brushing & frying
  • Flour glue:
    • 2 tbsp plain flour + 2–3 tbsp water (thick cream consistency)

Method

  1. Mix all ingredients for the filling in a bowl – this must not be wet, otherwise it’ll be a soggy filling.
  2. Set the filo out on a clean worktop, and split in half so you’re working with squares!
  3. Add 1 tbsp filling per wrapper.
  4. Roll tightly and seal with flour glue.
  5. To cook: fry at 180°C for 2–3 mins until crisp and golden. Airfryer also works great. Drain on a rack.
