Paneer Red Curry

Serves 2

Ready in 45 mins

A cosy one-pot curry that's basically a hug in a bowl. Paneer marinated in red curry paste and simmered with aubergine, carrots and red onion in creamy coconut milk, then finished with lime and coriander. Tip: use veggie stock to keep it vegetarian, and any curry paste works, even massaman.

Ingredients

  • 200g All The Aunties Original Paneer
  • 2 tbsp red curry paste of choice (we use a massaman paste)
  • 1 tbsp garlic ginger paste
  • 1 red onion – cubed
  • 1 aubergine – cubed
  • 2 carrots – cubed
  • 400ml coconut milk
  • Veggie stock/bone broth (add water for texture)
  • 1 tsp honey
  • Coriander, lime to top

Method

  1. Fry off garlic/ginger in a pan on medium heat.
  2. Marinate paneer in the red curry paste, add to pan and fry off till aromatic
  3. Add in all veggies
  4. After a couple of mins add in the coconut milk, stock and honey.
  5. Cook for 20-30 minutes till the veggies are soft. Add water for desired consistency.
  6. Serve with rice, and lime!
