Grilled Peach and Basil Panzanella with Hot Honey Paneer

Ingredients

  • 200g All The Aunties Original Paneer
  • 4 juicy peaches
  • Leafy greens of choice
  • (watercress, rocket work well) Hot honey (just mix honey and chilli flakes)
  • 1/4 red onion
  • Toasted flaked almonds
  • Stale loaf
  • Basil
  • Mint
  • For the dressing: 1 tbsp olive oil, 1 tbsp balsamic vinegar, 1 tsp honey, 1/2 tsp mustard Salt n pepper

Method

  1. Crumble up your loaf into croutons and chuck into the oven for 15 minutes at 200deg
  2. Cube up your paneer and slice up your peaches and then heat up a pan to medium heat
  3. In the meantime, make your hot honey (just mix honey and chilli flakes with a splash of vinegar)
  4. Grill your peaches on a high heat for 2 minutes a side
  5. Once charred take out and toss in your paneer
  6. Once the paneer is golden toss into the hot honey mix
  7. Take your bread out the oven and slice up the onion
  8. Mix together your dressing and then assemble your salad with the rest of the ingredients
